The Winestillery Old Tom Gin reimagines a historic English style, Old Tom, famous in the 18th and 19th centuries for its sweetness, traditionally achieved by adding sugar to mask the roughness of distillates of the time.
In this Tuscan version, the soft and rounded character is preserved without external sweeteners: native botanicals such as orange, cinnamon, and mace naturally bring smoothness and seductive body, while maintaining authenticity of flavor.
After distillation, the gin rests briefly in French oak barriques previously used for aging Sangiovese, gaining structure, depth, and silky aromatic complexity, along with a delicate straw-yellow color with golden highlights. The result is an original and surprising gin, blending English tradition with the terroir of Chianti Classico, offering an elegant and unique aromatic profile.
