Organic Mediterrean Gin - Thompson Bros (45,7% - 700ml)

Founded by the Thompson brothers in the heart of the Scottish Highlands, Dornoch Distillery is known for its artisanal and experimental approach to distillation. Located within the old stables of Dornoch Castle, this small yet ambitious distillery produces gin and whisky in limited quantities, with great attention to ingredient quality, sustainability, and authenticity of process.

Distillation method: Discontinuous, Pot Still

The distillery performs separate infusions of citrus fruits and fresh seasonal herbs, which are then blended with a base botanical mix composed of juniper, coriander seeds, black pepper, dried lime, dried lemon, angelica root, cardamom, and meadowsweet.
The individual distillations include lemon peel, orange peel, bergamot, thyme, rosemary, and bay leaf. All ingredients are chosen to enhance the Mediterranean profile of the gin.

The final blend is slowly diluted over a two-week period, maintaining the fresh and aromatic notes that define this unique gin.

This Mediterranean organic gin is distilled using the discontinuous method in traditional pot stills and is non-chill filtered to preserve its full flavor, texture, and aromatic characteristics.
