The Koval Dry Gin is produced by the Koval Distillery in Chicago, the city’s first distillery to open since the Prohibition era.
Founded with the aim of bringing back artisanal distilling to the American metropolis, Koval crafts every spirit – whether whisky, gin or liqueur – entirely in-house: from selecting the raw materials to fermentation, distillation, bottling and packaging. The distillery uses only 100% organic ingredients, all certified Kosher.
The Koval Dry Gin is produced in small batches, starting from organic grains fermented directly at the distillery. Distillation is carried out with great attention to the cut of heads and tails, ensuring that only the purest heart of the spirit is preserved. The recipe features a unique combination of botanicals, including wild spices and meadow flowers. Botanicals are finely milled, infused, and carefully redistilled to preserve their natural aromas, resulting in an elegant, complex and deeply expressive gin.

Color: Clear, crystalline.
Nose: Bright, clean juniper immediately joined by delicate notes of white blossoms and wildflowers, evoking spring meadows in bloom. Hints of rose petals, lavender and a subtle touch of vanilla add elegance and depth to the bouquet.
Palate: Dry and precise, with a resinous juniper core and a creamy, almost buttery texture. Intense floral notes – especially lavender – intertwine with bitter orange peel, white pepper and a gentle spiciness of cardamom and peppercorns, adding vibrancy and structure.
Finish: Medium length, warm and satisfying, with returning notes of dry pine, light spice and lingering citrus. A classic, crisp and dry closing impression.
