Ki No Bi means “beauty of the seasons” and refers to the choice of using only fresh botanicals from Japan: citrus fruits, flowers, leaves, spices, and fruit.
This gin is made by distilling a rice-based spirit infused with botanicals divided into 6 groups: Base (juniper, iris, Hinoki wood), Citrus (yellow yuzu, lemon), Herbs (green Sansho pepper, Kinome shoots), Spices (ginger), Flowers and Fruit (bamboo and shiso leaves), Tea (Gyokuro green tea). These 6 groups of botanicals are distilled separately to obtain 6 different gins, whose careful blending results in the harmony of “Ki No Bi”.

Nose: The gin opens with an explosion of citrus fruits, particularly yuzu, enriched by delicate notes of green tea and juniper, with a hint of pine adding freshness.
Palate: At first sip, the gin offers a lively burst of citrus, with yuzu flooding the palate. Then juniper and pine emerge, transforming into an earthy, herbal, and minty profile, which gradually softens to reveal gentler notes of ginger, peppercorns, and bitter black tea.
Finish: The finish is long, exceptionally dry, and refreshing.
