The Ki No Bi Go Kyoto Dry is a limited edition gin (15,000 bottles produced) created to celebrate the 5th anniversary of Ki No Bi: in Japanese, Go means five.
It is made with rice spirit to which several regional botanicals are added, such as yuzu, ginger, Uji gyokuro tea, and Japanese red pine (which replaces the hinoki used in the classic Ki No Bi). Bottled at a higher ABV of 50%.

Nose: Opens with a fresh and vibrant aromatic bouquet, where yuzu stands out with its citrus sweetness and sansho adds a touch of spicy brightness. The aroma is further enriched by subtle notes of fresh grass and a delicate hint of white chocolate, evoked by gyokuro tea, adding a soft and refined depth.
Palate: The entry is sweet and enveloping, with a smooth diffusion of fruity notes. The initial sweetness quickly merges with the lively spiciness of sansho pepper and the woody, resinous richness of akamatsu, a Japanese red pine. Fresh citrus develops dynamically, perfectly balancing the more intense and spicy notes.
Finish: Long and complex, with the return of red pine and juniper nuances that recall the tranquility of the forest. Ginger and lemon notes add a lively, zesty freshness, creating a pleasant and well-balanced aftertaste that invites another sip.
