The Isle of Raasay Hebridean Gin is the first legal spirit ever produced on the island, a place long known for its tradition of illicit distilling handed down over time. This gin marks an official return to the art of distillation on Raasay, combining history, terroir, and innovation. The recipe is made up of ten carefully selected botanicals, some of which are sourced directly from the island. Among these are hand-picked Raasay juniper, rhubarb root, sweet orange and lemon peel, coriander seeds, and cubeb pepper, which together give the gin its fresh, citrusy, and balanced profile.
Distillation takes place in a copper still crafted by the Italian company Frilli, using mineral water drawn from the distillery’s own well, a key element in shaping the flavor profile of the product. Completing the recipe is a drop of their double-distilled malt spirit (new make), which adds body, structure, and depth to the gin.
