The Innaki Gin is an extraordinary, rare, and authentic distillate, the result of the solitary and meticulous work of Shohei Tatsumi, founder of the tiny Tatsumi Distillery in the mountainous heart of Gifu, Japan.
Produced in micro-batches of no more than 400 bottles, it represents one of the purest expressions of Japanese craftsmanship applied to gin. Its alcohol base is built on two traditional shōchū: one obtained from sake kasu, the solid residue from sake fermentation, and the other chicory shōchū distilled from chicory root, giving the spirit unexpected depth and structure. To this rich base is added a single botanical: the finest juniper berries from the pristine mountains of Northern Macedonia, renowned for their high concentration of aromatic oils.
Distillation takes place in a rare wooden kabutogama still, dating back to the Edo period (late 17th century). Today, only a handful of distilleries in Japan still use it, and Tatsumi Distillery is the only one in the world employing it to produce Western-style spirits. This method, as inefficient as it is fascinating, requires immense dedication and yields a spirit of profound, natural, and unrepeatable character. The result is an essential and luminous gin, with fresh, woody notes, citrus undertones, and a subtle fruity aromaticity.
