The Hills & Harbour Gin is a handcrafted spirit produced by Crafty Distillery in Newton Stewart, in the southwest of Scotland. It stands out for its “grain to glass” approach—producing the base alcohol directly at the distillery from local grain, through a seven-day fermentation process that gives the spirit greater complexity and smoothness.
Its aromatic profile is built on eleven selected botanicals, carefully balanced to stimulate the five basic tastes: the sweetness of mango, the acidity of orange peel, the bitterness of noble fir, and the salty and umami notes of seaweed. The result is a gin with a complex, harmonious, and original character.

Nose: A fresh and herbal opening, dominated by resinous juniper and green pine notes. This is followed by hints of ripe tropical fruit, pink grapefruit, and a touch of marine salinity from oak seaweed. The aromatic profile evokes the contrasts between hills and coast, from which the gin takes its name.
Palate: On the palate, the gin is silky and full, with an entry led by juniper and the woodland character of noble fir. Sweet orange peel adds liveliness, while a delicate tropical note of dried mango introduces a pleasant fruity element. The flavor evolves into subtle citrus spice, completed by a saline trace that adds depth and structure.
Finish: Vibrant, with light spicy notes, umami nuances, and a lingering saline sweetness. The texture is creamy and velvety.
