The recipe for Esker Scottish Gin took over two years of experimentation before being perfected. In 2016, the distillery, located on the Kincardine Estate in Royal Deeside, Scotland, launched its London Dry Gin. The formula includes 12 botanicals that combine traditional ingredients with elements typical of Scotland. Among the latter, the sap of silver birch stands out as the gin’s true aromatic signature, along with milk thistle, rosehip, and heather. Completing the profile are classic botanicals such as pink pepper, citrus, and cassia. Distillation takes place in a traditional copper pot still, using the discontinuous method to enhance the purity and balance of the aromas.
The result is a classic gin with a distinctive personality: fresh and clean, with pronounced juniper notes, enriched by a warm, earthy, and slightly balsamic background from the birch sap.
